I haven’t specified the recipe for the raisin bread here as this one was rather thrown together and I didn’t weigh the ingredients. Needless to say any home made or decent shop-bought raisin loaf would be just fine!
Plums – 12 small (or 8 large)
Brown Sugar – quantity will depend on how tart your plums are but for a sweetish eating plum two or three tbsp should be about right.
Place all the ingredients in a heavy-based saucepan and poach on the lowest heat for around 20 minutes.
Ricotta – 250g
Cinnamon or mixed spice – one level tsp
Brown Sugar – four tsp (adjust to taste)
Mix all ingredients together, at least 20 minutes before serving but ideally the night before, and place in a serving bowl.
